VEGAN SALTED CARAMEL COOKIE! 😍🤤

Yes... This tower of gooey cookies is actually HEALTHY! 

Those cookies are made with simple, healthy and naturals ingredients. 

You will be amazed by how good they are. There's a perfect balance between the sweet of the caramel and the saltiness. 

You want the cookies to be super soft, gooey, even mushy. This is what makes the texture super special. 

They may look half-baked, but this consistency is the one you want: Feeling like a brownie, looking like cookies and tasting like heaven. 👌🏼

Here are some of the ingredients used in the recipe 👇🏼
- Organic Coconut Sugar 
- Maple-Vanilla Vegan Pro 🍁
- Dates
- Almond flour

The coconut sugar gives these cookies a "burnt-toffee" taste that goes so well with the salted caramel flavor. In fact, if you didn't know, toffee is super similar to caramel, except it's made with brown sugar instead of white sugar. Also, toffee is cooked at a higher temperature and for longer, which give this "burnt" taste and makes it harder when you talked about the candy itself.

ENOUGH TALK...HERE'S WHAT YOU ARE LOOKING FOR 

Ingredients for 10 cookies: 
110gr Medjool Dates (6 medium dates) 
10gr Flax Meal (1tbsp) + 3 Tbsp to create a vegan egg
80gr Coconut Sugar (1/2 cup) 
35gr Maple-Vanilla Vegan Pro (1 big scoop)
50gr Almond Flour
10gr Coconut oil
4Tbsp Water
1/2tsp Baking Soda
1/2tsp Baking Powder
1/3tsp Salt
1/2tsp Vanilla Extract + 1/2tsp Caramel extract
20gr Vegan mini Chocolate Chips

  

Method: 
Preheat oven to 370 Fahrenheit.
Pit the dates and put them in blender or food processor with water (or almond milk)
In a big bowl, make the vegan egg using the flax meal and 3tbsp of water
Transfer the dates in the bowl you used for the "egg", and add all the following ingredient except the chocolate chip. 
Mix everything with a spoon/fork
Fold in the chocolate chip
Use 1 big spoon to form the cookie, and place it on a greased pan. 
Bake for 11-12 minutes (center of the oven)
 

*They will be super soft, let them sit before transferring them. 

Dates and coconut sugars provide a great amount of quick carbohydrates. However, the fiber from the pea protein (and the dates) slow down the digestion, which prevent your blood glucose to spike. Healthy cookies like those are a great option for dessert or snack. 

Here is a good combo if you want to include it in your breakfast:
- Vegan Yogourt (or non-vegan if you want) + Salted Caramel Cookies + fruit
- Vegan Pro Smoothie or shake + Salted Caramel Cookies on the side 
- Salted Caramel Cookies crumble on top of your Açaï Bowl
