Those cookies are made with legumes, which is an amazing opportunity to make your kids eat them if they are not fans of it. These cookies are soft, perfectly sweetened by the maple syrups and the vegan protein, and has chocolate in it. It is a winning recipe in every way.

Soft Chocolate Chip Cookies

I always have fun cooking sweet treats with legumes. I think it's a great way to eat them!


This time, I decided to create cookies made from chickpeas.
If you have children, you can make them eat legumes by hiding them into these delicious cookies!


Ingredients (12 cookies)
2 cups chickpeas
2 tbsp. maple syrup
2 tbsp. lemon juice
1 tbsp. canola oil
1 tsp. vanilla extract
½ cup all-purpose flour
1 scoop of Vegan Pro – Maple-vanilla
1 tsp. baking powder
A pinch of salt
¼ cup of dark chocolate chip

Soft Chocolate Chip Cookies

Method

1. Preheat the oven to 350° F and line a baking pan with parchment paper.

2. In a food processor, combine the chickpeas, maple syrup, lemon juice, canola oil and vanilla

extract to obtain a smooth texture. Transfer the mixture to a bowl.

3. In another bowl, combine the flour, Vegan Pro, baking powder and salt.

4. Add the dry ingredients to the chickpea mixture and stir well. Add the chocolate chips.

5. Form 12 cookies and bake for 12 minutes in the oven.

6. Let cool and enjoy!
