Banana Pancakes with Caramel Coulis

So this is it. I created the best pancakes in history. So easy to make, but most of all, it's TASTY. Perfect for a cold January morning.

Adding caramel coulis, which requires only two ingredients, is a must. I recommend adding a little to your coffee for a special touch of sweetness!

 

Ingredients (4 pancakes)

1 cup Unbleached all-purpose flour
1/2 cup Oatmeal flour
1 tbsp Baking powder
1 cup Vanilla plant-based milk
1 large Banana, mashed
1 tsp Vanilla extract

Caramel coulis
1/2 cup Coconut sugar
2 tbsp Oat or soy cream



Method : 

1. In a bowl, combine the flours, coconut sugar and baking powder.

2. In a second large bowl, combine the plant-based milk, banana and vanilla. Gradually add the dry ingredients, mixing with a whisk.

3. In a hot, well-oiled skillet over medium heat, pour 125 ml (1/2 cup) of dough per pancake. Cook for about 3 to 4 minutes on each side. Repeat with the rest of the dough.

4. Meanwhile, combine coconut sugar and cream in a small saucepan. Over medium heat, bring to a boil. Reduce the heat to low and simmer for about 3 minutes. Serve over pancakes.

    J’ai dû tripler la recette lorsque j’ai refais ces délicieuses pancakes, au grand plaisir de mes enfants et de moi-même. Elles se congèlent bien ce qui en fait un excellent dépannage pour les matins pressés.
