Carrot Cake Mug Cake
Before I talk a little more about this cake, I just want to say that my boyfriend (who usually doesn't like carrot desserts) LOVED this recipe! I honestly think it's worth a try, especially since it only takes two minutes to make.
I added Camu Camu powder to this cake, and it sure is a perfect ingredient to add. Camu Camu has a tangy taste, but I personally find it adds a caramel taste to the cake, and it's divine. In addition to being rich in vitamin C, it contains several benefits. Click here to learn more!
Ingredients (1 serving)
1/4 cup Whole wheat flour
1 tbsp Pure Organic Coconut Sugar
1/2 tsp Ground cinnamon
1 tsp Pure Organic Camu Camu
1 tsp Baking powder
1 tbsp Canola oil
1/4 cup Plant-based vanilla milk
1 tsp Vanilla extract
2 tbsp Grated carrots
Vegan vanilla frosting (garnish)
Method
1. In a mug, mix all the ingredients until the texture is smooth and well combined.
2. Cook for 2 minutes in the microwave. Add icing (optional) and serve immediately.
