Matcha Green Tea and Dark Chocolate Cookies

Ingredients (12 cookies)
1/4 cup Coconut oil, melted
1/4 cup Maple syrup
1 tsp Vanilla extract
2 tbsp Unsweetened almond milk
1 cup All-purpose flour
1 tsp Baking powder
1 tbsp Pure Organic Matcha Tea
Method
1. Preheat the oven to 350ºF. Line a baking sheet with parchment paper and set aside.
2. In a medium-sized mixing bowl, mix the melted coconut oil, maple syrup, vanilla extract, and unsweetened almond milk until well combined.
3. In the same bowl, add the flour, baking powder, and matcha powder. Combine using a mixing spoon, spatula, or hands until you get a doughy texture without clumps.
4. Form a large ball with the dough, then place it in the center of a piece of parchment paper. Flatten with a rolling pin to a thickness of about 4 mm.
5. Using a round cookie cutter, shape 12 cookies. Place each cookie onto the parchment-lined baking sheet with at least 1 inch between each of them.
6. Bake in the oven for 10-11 minutes. For a fully soft cookie, 10 minutes. For a soft center and crunchy edges, 11 minutes is ideal.
7. Allow the cookies to cool, then dip them in melted dark chocolate until halfway through, let cool again on a cookie tray and enjoy!
