Travel-Friendly Energy Balls - From Rachel Stein

One of the easiest ways to stay healthy while on the go (without spending a ton of money on prepackaged 'healthy' snacks), is to make your own ahead of time. Not only is it cheaper, but you get to customize the flavors and control the ingredients to make sure nothing gross is added in. I like to include carbohydrates, protein, and fat while on the go so that I don't feel deprived. I also have a major sweet tooth, so it's important that I have something healthy to grab for in case of a chocolate emergency (it's a real thing, trust me).

I used my current favorite protein from Raw Nutritional, because it is naturally sweetened with coconut sugar (instead of a bunch of artificial sweeteners like other brands!) has flax seeds (high in magnesium and omega-3's!), and also a complete amino acid profile (which is important for plant based protein powders!). Also, did I mention that the vanilla maple flavor tastes like pancakes? It's SO good to balance out the cacao in this recipe.

Energy balls all have a relatively similar base, and there is so much room for customization. You will need something sticky, usually dried fruit (dates or raisins are my go-tos!), and something dry/flour-like (oats, protein powder, and cacao in this recipe!). I like also like to add coconut shreds, nuts, seeds, and sometimes coconut oil if I am looking to boost the calorie content (like for extra long travel days!)

CACAO-MAPLE ENERGY BALLS:

INGREDIENTS:

1/2 cup of dates or raisins

1/4-1/2 cup oats

2 Tbsp Raw Nutritional vegan protein

2 Tbsp cacao powder

1-2 Tbsp flax seeds, almonds, coconut shreds anything you would like to add! (optional)

INSTRUCTIONS:

1. Combine all of the ingredients except for the oats to a food processor or blender and blend until combined.

2. Slowly add in the oats until you reach your desired consistency (you should be able to roll them into balls without them sticking to your hands!)

3. Roll into balls and refrigerate until ready to eat or pack!

That's it! One of my all time favorite go-to snacks for long trips or even for a day out running errands. Eating healthy shouldn't be expensive or complicated, and this recipe is super easy!
