Vegan Hot Chocolate Cookies

Savoring the flavors of a comforting hot chocolate in a cookie? Count me in! This recipe has swiftly climbed the ranks to become an all-time favorite in my cookie repertoire. It encapsulates that perfect blend of rich chocolatey goodness and a delightful sweetness—just like indulging in a warm mug of hot chocolate after a brisk, wintry stroll. Trust me; it's a winning delight!

Vegan Hot Chocolate Cookies

This recipe has officially become my favourite cookie recipe. I wanted a chocolate taste but sweet at the same time. A flavour reminiscent of a good hot chocolate you enjoy after a long walk in the cold. It’s an absolute success!



Ingredients (12 cookies)

1 tbsp Cornstarch
2 tbsp Water
1 1/4 cup Unbleached all-purpose flour
1/4 cup Pure Cacao
1 tsp Baking soda
1/4 tsp Salt
1 sachet of 9 g Vanilla sugar
1/2 cup + 2 tbsp Vegetable margarine
1/3 cup Brown sugar, packed
1/3 cup White sugar
1 tsp Vanilla extract
1/4 cup Mini dark chocolate chips
12 Mini vegan marshmallows

 

Method : 

1. In a small bowl, cornstarch and water. Set aside.

2. Preheat the oven to 350°F and line a baking sheet with parchment paper.

3. In a bowl, mix the flour, cocoa, bicarbonate, salt and vanilla sugar. Set aside.

4. In a large bowl, combine cornstarch, margarine, brown sugar, sugar and vanilla extract. Add the dry ingredients and mix using a whisk. Add the chocolate chips and, with a spatula, mix gently.

5. Form 12 balls and place them on a baking sheet. You will have to repeat this step since the 12 balls will not fit on a single plate. I recommend starting with 6 balls. Add a marshmallow to the center of each cookie. Bake for 12 minutes and let cool before serving.
