15-minutes Vegan Tiramisu {Easy, in a mug, gluten-free}

Who's up for an EASY Vegan Tiramisu in a cup, ready in 15 minutes? We could not be more in love with this creation: tasty and perfectly balanced, fluffy, light and creamy. Coffee lover? This recipe is for YOU!

Ingredients (Makes multiple servings, varies according to the container size)

For the cream:
1 can (400 ml) Organic coconut whipping cream from Cha's Organics, previously refrigerated for 1 hour (very important step)
2 tbsp Maple syrup
1/2 tbsp Vanilla extract

To garnish:
1 pack Vegan graham crackers (we used the gluten-free, vegan S’moreables graham crackers from Kinnikinnick)
1 small cup Very strong espresso coffee
Pure Organic Cacao, amount to taste
Graham crackers, crushed (to decorate)

Method

1. Using a hand mixer or a stand mixer, prepare the cream by whisking the cold coconut whipping cream, maple syrup and vanilla extract together until creamy and homogeneous.

2. In coffee mugs, glasses or small serving jars, pour 2 tbsp of the cream prepared in step 1 in the bottom. Set aside.

3. In a medium bowl, pour the coffee. Using a fork, dip a graham cracker for 1 second to soak it with the coffee. No need to soak it for a long time; it will be too soft and will come apart if you leave it in the coffee for too long. Immediately place the cracker on top of the cream.

4. Repeat steps 2 and 3 until the containers are filled with cream and coffee cookies, alternately.

5. Dust the top with cacao powder, quantity to taste. If desired, add crushed graham crackers on top and serve.
