Almond Croissant Energy Bites
These Almond Croissant Energy Bites are the perfect healthy snack: soft, nutty, and naturally sweet. Made with wholesome ingredients like almonds, oats, and dates, they’re packed with energy and flavor.
Ingredients
- 1/2 cup Rolled oats
- 1 cup Almonds
- 10–12 Medjool dates (pitted)
- 1/3 cup Almond butter
- 1/2 scoop Vegan Pro Extra Vanilla
- 1 tsp Pure vanilla extract
- 1/2 tsp Almond extract
- 2–3 tbsp Almond milk
Topping
- 1/3 cup chopped almonds
- 1 tbsp powdered sugar (icing sugar)

Instructions
1- Add all ingredients into a food processor, except the chopped almonds and powdered sugar.
2- Blend until a sticky, smooth dough forms.
3- Roll into small bite-sized balls.
4- In a small bowl, place the chopped almonds.
5- Roll each ball in the almonds to coat.
6- Lightly dust with powdered sugar.
7- Refrigerate or freeze until firm.
