Baking these cookies is the perfect activity to do with your kids during your holiday vacation! Take your most beautiful cookie cutters out and get started! You can also give them out to your loved ones for a quick and tasteful gift.

Almond Holiday Cookies

December, the cookie season. Time to get out all your cookie cutters, to decorate lots of perfect little cookies and to enjoy lots and lots of frosting. Here’s a simple vegan recipe that everybody will love:

Preparation: 30 minutes
Refrigeration time: 2 hours or overnight
Cooking time: 8-9 minutes

Ingredients (about 35 small cookies)

1/4 cup Plant-based milk (we used almond milk)
1 tbsp Organic Ground Flaxseeds
1/3 cup + 1 tbsp Vegan butter, melted
3/4 cup Pure Organic Coconut Sugar or monk fruit sweetener
1 tsp Almond extract
1/4 cup Vegan Pro - Maple Vanilla
1/2 cup + 2 tbsp Unbleached all-purpose flour
1/4 tsp Fleur de sel
1/2 tsp Ground cardamom
1/8 tsp Allspice

Icing:

1/2 cup Vegan butter, at room temperature
1 1/2 cups Powdered sugar
1 tsp Almond extract
1 tsp Plant-based milk (we used almond milk)

Method

1. In a small bowl, combine plant-based milk and ground flaxseed and set aside for 5-7 minutes, stirring a few times.

2. Cream together butter and sugar until combined and fluffy. Mix in almond extract and ground flaxseed mixture.

3. Mix in the flour, protein, fleur de sel, cardamom and allspice until well combined. Knead the mixture for 2-3 minutes. The mixture will be soft, but it shouldn’t be sticky.
To test the dough, pinch a small amount between your thumb and index finger. The dough will be buttery and soft but should come together and not stick to your fingers. If the dough is too sticky, add some more flour, 1 tsp at a time, and if the dough is too dry, add some more plant-based milk, 1 tsp at a time.

4. Form the dough into a ball and tightly wrap it in plastic wrap or parchment paper and refrigerate for a minimum 2 hours up to overnight. The colder the dough, the easier it is to work with.

5. When ready to bake, preheat the oven to 350°F and line a baking tray with parchment paper.

6. Cut the dough into 3-4 portions and work with 1 portion at a time. Keep the remaining portions refrigerated. Using a rolling pin, roll out the dough and, using cookie cutters, cut cookies and place them on the prepared baking tray.

7. Bake for 8-9 minutes and allow cookies to cool down completely before icing them.

8. Meanwhile, using an electric whisk, prepare the icing by mixing all the ingredients together.

9. Decorate the cookies according to your preference.
