Apple Chia Pudding

Ah, apples – the beloved bounty of autumn! If you're like me and tend to gather more apples than you know what to do with during apple-picking season, this recipe is for you. To convey just how delectable this apple chia pudding is, let me share a testimonial from my partner, who isn't typically a fan of chia seeds: "Oh wow, it's really excellent! It tastes like crumble!"

Apple Chia Pudding

Yes, another apple recipe! I am sure I am not the only one who always picks too many apples during apple picking. I tell myself that you can only have a few recipes for cooking them.

To say how tasty this pudding is, I will quote my partner, who normally doesn't like chia seeds: "Oh wow, it's really excellent! It tastes like crumble! ".


Ingredients (1 serving)

Garnish
1 Apple, peeled and diced
1 tbsp Lemon juice
1 tbsp Maple syrup

Pudding
1/4 cup Plain plant-based yogurt
2 tbsp Vanilla plant-based milk
1tbsp Maple syrup
Pinch of cinnamon


Method :

1. In a pot, mix all the ingredients for the filling. Cook for 1 minute in the microwave. Using a fork, lightly mash the apples. Set aside.

2. In a bowl, mix all the ingredients for the pudding. Pour the mixture over the filling and leave to rest in the refrigerator for at least 2 hours.
