Apple Fritters with Coconut Sugar

There’s nothing more comforting than homemade apple fritters fresh from the fryer! These fritters are packed with apples caramelized in Raw Nutritional Coconut Sugar and finished with an irresistible crunchy glaze. Soft and fluffy on the inside with perfectly crisp edges, they make the perfect treat alongside a cup of coffee or as a sweet afternoon snack. A simple recipe that brings all the cozy flavors of fall to your kitchen.

Ingredients

For the Caramelized Apples
- 2 medium Apples, diced into small cubes
- 2 tablespoons Raw Nutritional Coconut Sugar
- 1 teaspoon Cornstarch
- 1 teaspoon Cinnamon
- 1 tablespoon Vegan butter

For the Thick Batter
- 150 g All-purpose flour
- 2 teaspoons Baking powder
- 1 tablespoon Raw Nutritional Coconut Sugar
- 1 pinch Salt
- ½ teaspoon Cinnamon
- 180 ml Unsweetened soy milk
- 1 teaspoon Apple cider vinegar
- 2 tablespoons Neutral oil
- Neutral oil for frying (vegetable, canola, or peanut oil)

For the Glaze
- 120 g (1 cup) Icing sugar
- 2 teaspoons Soy milk, plus more as needed

Instructions

Step 1: Prepare the Caramelized Apples

In a skillet over medium heat, melt the vegan butter. Add the diced apples, 1 tablespoon of Raw Nutritional Coconut Sugar, the cinnamon, and the cornstarch. Cook for 3–5 minutes, stirring frequently, until the apples are tender and coated in a thick syrup. It is important that the moisture from the apples has evaporated. They should be slightly sticky when ready. Remove from the heat and let cool slightly.

Step 2: Make the Vegan Buttermilk

In a small bowl, combine the soy milk and apple cider vinegar. Let sit for 20 minutes, or until the mixture has curdled and formed visible lumps. It will thicken slightly, helping create a softer, fluffier batter.

Step 3: Mix the Dry Ingredients

In a large mixing bowl, whisk together the flour, baking powder, coconut sugar, salt, and cinnamon.

Step 4: Prepare the Batter

Add the oil and the soy milk mixture to the bowl of dry ingredients. Stir briefly with a spoon, stopping as soon as the flour is incorporated. The batter should remain very thick and sticky. Gently fold in the cooled apples.

Step 5: Fry the Apple Fritters

Fill a deep pot or fryer with neutral oil and heat over medium heat. The oil should be hot but not smoking—you are aiming for a gentle to medium frying temperature rather than a high one.

Using an ice cream scoop, carefully drop generous scoops of batter into the hot oil, leaving space between each fritter. An irregular shape is perfectly fine and actually preferred, as it creates the classic crispy edges of apple fritters.

Fry for about 3 minutes per side, or until golden brown.

Transfer the fritters to a wire rack set over a baking sheet to drain excess oil. Let cool for a few minutes.

Step 6: Glaze the Fritters

While the fritters are cooling, whisk together the icing sugar and soy milk in a bowl. The glaze should be smooth and thick, similar to white glue. Add a few extra drops of soy milk if needed to adjust the consistency.

Dip all sides of each warm fritter directly into the glaze. Return them to the wire rack. The glaze will set and form a crisp coating within about 5 minutes.
