Apple Upside-Down Cake

Apple Upside-Down Cake
Fall, more specifically September, is the perfect time to bake with apples. I love creating fall recipes! I find them all so delicious and comforting, plus they leave a perfect scent in the house.
If you have a brunch or dinner party planned, this cake is the recipe to serve!
Ingredients (6 to 8 servings)
- 1 1/2 cups All-purpose flour
- 1 serving Vegan Pro - Butterscotch
- 2 tsp Baking powder
- 1/2 tsp Baking soda
- Pinch of Salt
- 1 1/4 cups Plant-based milk
- 1/2 cup Canola oil
- 1/2 cup Packed brown sugar
- 1 tbsp Apple cider vinegar
- 2 tsp Vanilla extract
- 1/2 tsp Ground cinnamon
Garnish
- 2 Apples, peeled and sliced
- 2 tbsp Plant-based margarine
- 1/4 cup Maple syrup
- 1 tbsp Water

Method
1- Preheat oven to 350°F. Oil and flour an 8 x 8-inch round or square baking pan.
2- In a bowl, combine the flour, Vegan Pro, baking powder, baking soda, and salt. Set aside.
3- In a large bowl, combine the plant-based milk, oil, brown sugar, vinegar, vanilla, and cinnamon. Stir the dry mixture into the liquid mixture, stirring continuously with a whisk until smooth. Set aside.
4- In a bowl, for the topping, combine the margarine, maple syrup, and water. Melt for 45 seconds in the microwave. Pour the liquid into the bottom of the pan and cover with the apple slices. Pour and spread the batter over the apples. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
