Baklava-Inspired Stuffed Croissants

If you love the flavors of baklava but want something quick, nourishing, and a little extra fun—these stuffed croissants are for you. Flaky, golden vegan croissants are filled with a creamy pistachio protein filling that's naturally sweetened and spiced just right. Topped with rich melted chocolate and crunchy pistachios, they’re the perfect balance of indulgence and wholesome goodness. Ideal for brunch, dessert, or a fancy snack that feels like a treat!

Ingredients

- 5-6 small Vegan croissants
- 50g semi-sweet or dark Chocolate, for drizzling
- ¼ cup crushed Pistachios, for garnish

For the Protein Pistachio Cream:

- 1 block silken Tofu (200g)
- ¼ cup Maple syrup
- ¼ cup Pistachio butter
- 2 tablespoons Plant-based milk of choice
- 2 scoops + 2 tablespoons Vegan Pro Maple-Vanilla
- 1 to 2 teaspoons Pure Organic Matcha Tea*
- ¼ teaspoon ground cinnamon
- A generous pinch of ground cloves
- Zest of 1 lemon
- 1 pinch Salt

Method:

1- Prepare the pistachio cream by blending all the ingredients using an immersion blender or food processor.

2- Transfer the cream to a piping bag if desired, or store in an airtight container and refrigerate while preparing the other ingredients.

3- Warm up the croissants if desired, to make them perfectly crispy.

4- Melt the chocolate and prepare the crushed pistachios.

5- Slice the croissants in half and generously fill them with the pistachio cream.

6- Close the croissants and drizzle melted chocolate over the top.

7- Sprinkle with crushed pistachios and add a little pistachio butter if desired.

Note:
*For an extra green color boost, you can add matcha. Some pistachio butters are very green, while others have a more natural tone—totally up to you if you want a greener or more neutral-colored cream. Either way, it will be delicious!
