Banana Protein Breakfast Squares

If you’re looking for a great breakfast to-go in the morning, this recipe is for you! If you're like my partner and wake up last minute to work, you don't always have time for lunch. These homemade squares are perfect for that!

In addition, they can easily be frozen. Just place them separately on a baking sheet, freeze them for an hour before transferring them to an airtight container or freezer bag. They thaw overnight at room temperature or for about 1 minute in the microwave. This way you can be sure you always have some on hand.

Ingredients (9 squares)

1 cup Quick-cooking oatmeal
1/2 cup Whole wheat flour
Pinch of salt
1/3 cup Liquid coconut oil
1/3 cup Maple syrup
1 Banana, mashed
1/4 cup Natural peanut butter
1 tsp Vanilla extract


Method


1. Preheat the oven to 350 ° F and line an 8 x 8-inch baking dish with parchment paper.

2. In a bowl, combine the oatmeal, Vegan Pro, flour and salt.

3. In a large bowl, using a whisk, combine the oil, maple syrup, banana, peanut butter and vanilla. Gradually incorporate the dry ingredients into the liquid preparation and mix, using a spatula, until a smooth paste is obtained.

4. Pour mixture into pan and bake for 30 minutes in the oven or until a toothpick inserted in the center of the cookie comes out clean.
