This blueberry protein parfait is a delicious and versatile recipe that works as a snack, dessert, or even a light lunch. It’s packed with plant-based protein from silken tofu and Vegan Pro, layered with a sweet blueberry puree and crunchy granola. Quick to prepare and perfect for meal prep!

Blueberry Protein Parfait

Is this a dessert? A snack? A lunch? This recipe can easily be all three! Very rich in plant-based protein and flavor, it's absolutely divine. It's a big hit and very quick to make. I recommend adding it to your meal prep.

For this recipe, I prefer to use frozen blueberries because of their sweet juice. If you have fresh blueberries on hand, it's fine to use them either.

Ingredients (2 servings)

- 300g soft (silken) Tofu
- 2 tbsp Lime juice
- 1/4 cup Maple syrup
- 1 tsp Vanilla extract
- 1 cup frozen Blueberries
- 1 serving Vegan Pro – Maple Vanilla
- 1/2 cup Granola

Method

1- Using a stick blender, blend the tofu, lime juice, maple syrup, and vanilla.

2- Thaw the blueberries for about 1 minute in the microwave.

3- Add the blueberries and Vegan Pro to half of the pudding mix. Using a stick blender, reduce in puree. Let stand for 10 minutes.

4- To assemble, divide a quarter of the pudding mix between 2 containers. Divide the blueberry puree over the top and top with the pudding mix. Top with granola and fresh blueberries.
