Blueberry Quinoa Porridge
This blueberry quinoa porridge is a nourishing and comforting way to start your day. Ingredients
- 1 cup Cooked quinoa
- 1 cup Plant-based milk
- ½ to 1 scoop Raw Nutritional Maple-Vanilla protein
-1 cup Blueberries (fresh or frozen)
- 1 tablespoon Maple syrup, plus more to taste
- ½ teaspoon Vanilla extract
- A splash of Lemon juice and a bit of lemon zest
- ½ tablespoon Almond butter
- 1–2 tablespoons Vanilla plant-based yogurt
- ½ tablespoon Coconut flakes or Nuts of choice
- A few fresh Blueberries, for garnish

Method
1- In a blender or shaker, mix the protein powder with the plant-based milk. Set aside.
2- In a small saucepan, add the cooked quinoa, frozen blueberries, the protein milk mixture, maple syrup, and vanilla.
3- Stir well and let simmer over low–medium heat for about 4–5 minutes.
4- At the end of cooking, stir in the lemon zest and lemon juice.
5- Serve with your favorite toppings such as almond butter, yogurt, and nuts of choice.
