Carrot Squares with Vanilla Frosting
I love carrot desserts, and this one is my top 3 of the best desserts! These squares are in between super moist muffins and a decadent cake. They are sure to please the whole family!
The frosting is made from the Vegan Pro in Maple Vanilla flavour, and the recipe wouldn't be as yummy without it. Creamy and tasty, it's the perfect finishing touch.
Ingredients (9 pieces)
Method :
1. Preheat oven to 350°F and line a 9 x 9-inch (20 x 20 cm) square pan with parchment paper.
2. In a bowl, combine flour, baking powder, baking soda, cinnamon, ginger and salt.
3. In a second large bowl, combine the oil, coconut sugar, maple syrup, oat milk and vanilla. Gradually add the dry ingredients, mixing with a whisk. Add the carrots and stir gently with a spatula.
4. Pour the mixture into the pan and bake for 30 to 35 minutes in the oven or until a toothpick inserted in the center of the cake comes out clean. Let cool.
5. Meanwhile, in a bowl, combine all the ingredients for the frosting with a whisk.
6. Once the cake cools, top it with frosting.
