Cinnamon Bun Flavored Baked Oatmeal

Baked oatmeal for breakfast: a simple recipe to make, comforting by its warmth and texture. Because it's fall, and we looove this season, here's a cinnamon bun version that's perfect for the occasion. Pssst: You can prepare the recipe the day before and put it in the oven only in the morning, super convenient for weekday breakfasts! More than perfect for #mealprep.

Ingredients (1 serving)

For the oatmeal
1/2 cup Oats
1 tbsp Vegan Pro - Butterscotch
1/2 cup Plant-based milk of your choice
1/2 cup Unsweetened applesauce (or a ripe banana, mashed with a fork)
1/2 tsp Baking powder
1/2 tsp Ground cinnamon
1/2 tsp Vanilla extract
Pinch of salt

For the icing
1 tbsp Nut or seed butter of your choice (we used almond butter)
1 tbsp Maple syrup
1/2 tsp Ground cinnamon

Method

1. Preheat the oven to 350°F.

2. Using a blender or a food processor, reduce all the ingredients for the oatmeal, then pour the mixture into a small baking dish. The mixture will double in volume during cooking, so do not fill the plate more than halfway. Set aside.

3. In a small bowl, mix all the ingredients for the icing.

4. Spread the icing over the oatmeal in a swirl. We used a Ziploc bag with a corner cut off to do this.

5. Bake for about 40 minutes. Serve hot.
