Coconut Sugar Chai Latte Cookies
Who doesn't like cookies? Especially soft and chewy sugar cookies? How about a chai latte flavored version? Oh yes, we have the best cookie recipe for you right here:
Preparation: 15 minutes
Freezing time: 30 minutes
Cooking time: 12 minutes
Ingredients (10-12 cookies)
1/2 cup Vegan butter, at room temperature
1/2 cup Pure Organic Coconut Sugar
1/4 tsp Ground cinnamon
1/4 tsp Ground cardamom
1/4 tsp Ground ginger
1 Ripe banana
1 tsp Vanilla extract
1 cup All-purpose flour
1/4 tsp Baking powder
1/4 tsp Baking soda
1 scoop Vegan Pro - Maple Vanilla
1/2 tsp Salt (we used Fleur de sel)
Method
1. In the bowl of a stand mixer, add the vegan butter, coconut sugar, cinnamon, cardamom, ginger, banana and vanilla. Cream together until soft and fluffy.
2. In another large bowl, add the flour, baking powder, baking soda, vegan protein powder and salt. Mix.
3. Pour the dry ingredient mixture into the wet ingredient mixture. Mix well until you obtain a homogeneous dough.
4. Cover the bowl of cookie dough and add to the freezer for 30 minutes.
5. Preheat the oven to 350°F. Line a baking tray with parchment paper. Set aside.
6. Remove the dough from the freezer. Using an ice cream scoop and your palms, form and distribute small balls (10-12) of cookie dough on the baking tray lined with parchment paper.
7. Place each cookie at least 2 inches apart on the tray. Bake for 12 minutes.
8. Remove the cookie tray from the oven and let the cookies cool for 5-10 minutes.
