Cookies and Cream Energy Balls

Energy balls are the easiest and quickest snack to make. They’re perfect for busy Sundays when you want to prepare lunches for the week. These are extra proteins, thanks to Vegan Pro and tahini. Feeling peckish while working? Need a post-workout snack? This recipe is for that!



Ingredients (15 balls)

1 cup + 2 tbsp Quick-cooking oatmeal
1/2 cup + 2 tbsp Almond flour
2 servings Vegan Pro – Cookies N Cream
1/4 cup vegan White chocolate chips
1/4 cup Dark chocolate chips
1/2 cup + 2 tbsp Tahini
1/4 cup Water
3 tbsp Maple syrup
1 tsp Vanilla extract

Topping (optional)
1/4 cup Vegan white chocolate chips



Method : 

1. In a food processor, pulse together oats, flour, Vegan Pro and chocolate chips. Add tahini, maple syrup and vanilla. With the processor running, gradually add water until a sticky ball forms. Form 15 balls and place on a baking sheet lined with parchment paper.

2. In the microwave, melt white chocolate, stirring every 10 seconds until melted. Using a spoon, pipe chocolate lines onto the balls. Let it sit in the refrigerator for 10 minutes before transferring it to an airtight container.

It is best to store the balls in the refrigerator.
