Crunchy Chocolate Bites

I love cooking recipes that are simple, quick, but above all, useful, like these crunchy bites which are, very delicious but also super practical to always have in your refrigerator. They are just right for a light meal at any time of the day.

Personally, my boyfriend and I eat them with a little hot coffee, and the combo is perfect. Otherwise, just before (or even after) a workout is great too! RAW Nutritional's Pure Organic Cacao powder makes a nice difference in this recipe. Each cacao is different, and it is important to cook with quality cacao powder for the best result and an exquisite taste!

Ingredients (25 bites)
1/2 cup Plant-based butter
1/2 cup Pure Organic Coconut Sugar
1 1/2 cup Quick-cooking oatmeal
1/2 cup Pumpkin seeds, salted
1/2 cup Unsweetened grated coconut
1/4 cup Pure Organic Cacao

Method

1. Preheat the oven to 400 °F and line a baking sheet with parchment paper.

2. In a small saucepan over medium heat, melt the butter and sugar for 5 minutes. Bring to a boil over medium-high heat and boil, without stirring, for 3 minutes. Remove from the heat and let stand for 2 minutes.

3. Meanwhile, in a bowl, combine the remaining ingredients. Pour in the sugar mixture and mix well.

4. Place the mixture on the baking sheet and form a 9 x 7-inch rectangle, pressing down with your fingers to make sure the blend is very compact.

5. Bake for 10 minutes in the oven. Let cool 1 hour before breaking the rectangle into 25 bite-size pieces.
