Double Chocolate Cookies

Double chocolate cookies are a classic. This year, for Christmas, we decided to do a homemade cookie exchange with our friends. These cookies will definitely be the gift I give. They are absolutely perfect and delicious. Any chocolate lover will love them!

Ingredients (12 cookies)

1 tbsp Cornstarch
2 tbsp Water
1 1/3 cups Unbleached all-purpose flour
1/2 cup Pure Cacao
1 tsp Baking soda
1/8 tsp Salt
1/2 cup + 2 tbsp Plant-based margarine
1/4 cup Water
1/3 cup Brown sugar, packed
1/3 cup White sugar
2 tsp Vanilla extract
1/3 cup Mini dark chocolate chips

Method :

1. In a small bowl, mix cornstarch and water. Set aside.

2. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.

3. In a bowl, mix flour, cacao, baking soda and salt. Set aside.

4. In a large bowl, using a whisk, mix cornstarch, margarine, water, brown sugar, sugar and vanilla extract. Add dry ingredients and mix. Add chocolate chips and, using a spatula, gently mix.

5. Form 12 balls and place on the baking sheet. All 12 balls will not fit on one baking sheet, I recommend starting with 6 balls. Bake for 12 minutes and let cool before serving.
