Extra Vanilla Rice Pudding

Extra Vanilla Rice Pudding
This extra vanilla rice pudding is the perfect blend of comfort and indulgence. Rich and creamy, it’s naturally sweetened with maple syrup and elevated by a deep vanilla flavor. It’s also boosted with plant-based protein for a nourishing twist. Enjoy it warm or chilled, depending on your mood!
Ingredients
- 2 1/2 cups Plant-based milk of your choice
- 1/3 cup Arborio rice
- 2 tbsp Maple syrup
- 1/2 scoop Vegan Pro Extra Vanilla
- Seeds from half a vanilla bean or pure vanilla extract
- 1 Cinnamon stick
- 1/4 cup Soy cream (Belsoy)

Instructions
1- In a saucepan, combine the milk, rice, maple syrup, protein powder, and vanilla. Mix well.
2- Bring to a boil over medium-high heat, then add the cinnamon stick.
3- Reduce heat, cover, and let simmer for 20–30 minutes, stirring frequently to prevent sticking.
4- Add the soy cream, mix well, and remove from heat.
5- Serve in small bowls or glasses.
6- Top with lemon zest and fresh raspberries if desired.
7- Refrigerate for 2 hours for a chilled pudding (can also be enjoyed warm or at room temperature).
If the pudding thickens too much when chilled, simply add a bit of milk or cream to adjust the consistency.
