A simple and cozy recipe perfect for Sunday brunch! This French toast casserole is made in one dish with minimal cleanup and yields several servings at once. Customize it with your favorite toppings like berries, maple syrup, or nuts.

French Toast Casserole

A new Sunday tradition in our little family is making pancakes! I love this French toast casserole, which allows us to have several servings ready at once without having to cook one loaf at a time in the stove. Plus, it's a one-pot recipe that requires practicly no dishes, which we love!

Everyone can customize their topping to their liking.

Ingredients (6 servings)

- 7 cups Bread, cubed (see notes) 
- 1 cup Vanilla oat milk 
- 1/4 cup Cornstarch 
- 1/4 cup Pure Coconut Sugar
- 1 tbsp Vanilla extract 
- 1 tsp ground Cinnamon 
- 3/4 cup Mixed nuts (here: pecans, walnuts, and almonds) 
- 1/8 tsp Salt 

Method

1- Preheat oven to 350°F. Oil a 9 x 13-inch (23 x 33 cm) baking dish.

2- Directly in the baking dish, whisk together the plant-based milk, cornstarch, sugar, vanilla, and cinnamon. Add the bread and nuts. Toss to coat. Let stand for 5 minutes.

3- Bake for 25 minutes or until the bread is golden brown. Serve with maple syrup and berries, if desired. Notes Use rye bread or dry, stale bread.
