I don't know if you remember the little brownies you buy in brown bags at the grocery store? I loved this sweetness when I was a kid. Like, a lot. When I thought about creating a fudge-style cookie recipe, I sure expected something very chocolatey, but I didn't think the cookies would look so much like these brownies.
Well, the taste and texture are 100% present. It's a delicious snack that's quick and easy to prepare. A good idea for lunchboxes!
Ingredients (12 cookies)
1 cup Unbleached all-purpose flour
1 scoop Vegan Pro - Butterscotch
1/3 cup Pure Organic Cacao
1 tsp Baking soda
1/2 tsp Baking powder
1/4 tsp Salt
1/3 cup Vegetable margarine
1/3 cup Pure Organic Coconut Sugar
3/4 cup No sugar added applesauce
2 tsp Vanilla extract
1. Preheat the oven to 350 °F and line a baking sheet with parchment paper.
2. In a bowl, combine the flour, Vegan Pro, cacao powder, baking soda, baking powder and salt.
3. In a large bowl, combine the margarine, coconut sugar, applesauce, and vanilla extract using a whisk. Gradually incorporate the dry ingredients into the liquid preparation, mixing with a spatula.
4. With the dough, shape 12 balls with 2 tablespoons. Place the balls on the baking sheet and bake for 10 minutes in the oven.
