Giant Red Velvet Cookie

Did you know the Red Velvet cake is traditionally a red, crimson, or scarlet-coloured layer cake layered with ermine icing? Traditional recipes do not use food colouring, with the red colour due to non-Dutched, anthocyanin-rich cocoa. This recipe is a fun twist on an absolute classic!

Giant Red Velvet Cookie

I've been thinking about creating a giant biscuit recipe for over a year... The time has finally come! I decided to make a red velvet since I had white chocolate chips lying around in my kitchen.

A tasty biscuit that is eaten like cake!


Ingredients (8 servings)

1 tbsp Organic Ground Flaxseeds
2 tbsp Water
1 1/4 cups Unbleached all-purpose flour
1 tbsp Pure Organic Cacao
1/4 tsp Salt
1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 cup Vegetable oil
1/2 cup Granulated sugar
2 tsp Vanilla extract
1 tsp Red liquid food coloring
1/2 cup Vegan white chocolate chips

 

Method : 

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. In a small container, mix flax seeds and water together. Leave to swell for 5 minutes.

3. In a small bowl, combine flour, cocoa, salt, baking powder and baking soda. 

4. In a large bowl, using a whisk, combine the flax mixture, oil, sugar, vanilla and coloring. Add the white chocolate chips and, using a spatula, mix gently.

5. Place the ball of dough on the baking sheet and form a disc of 9 inches (23 cm). Bake for 20 minutes.
