Healthy Date & Cranberry Cookies (Oil-Free + Quick)
Cookies are good, but healthy cookies that you can eat for breakfast, snack, part of your lunch are even better! Here is a twist on date cookies!
To make it more festive with a touch of holidays, we used half date and half cranberries. This recipe contains no oil has we switch it up for apple sauce.
Adding vegan pro to these cookies cut down the carbohydrate coming from the flour and add a great source of protein to the recipe. You'll also be provided fibers, and of course, the most delicious taste.
Sweetened naturally, those cookies feels healthy, but without any compromise on taste and texture. A soft but still consistent bite is what you'll have with those. They are super quick to do, minimal time in the oven and it's ready to be enjoyed.
Ingredients
- 1 cup Pitted Dates
- 1 cup Dried Cranberries
- 1/4 cup Maple Syrup
- 1/3 cup Apple Sauce
-1 tsp. Vanilla Extract
- 1 cup Oats (quick oats or old fashioned)
- 1 cup All-Purpose Flour
- 1/2 cup Maple-Vanilla Vegan Pro
- 1/2 tsp. Salt (optional)
Method
1. Preheat oven to 375F, and line a cookie pan with parchment paper
2. Soak dates and cranberries in boiling water for 5 minutes and drain.
3. Transfer to a food processor, then add the maple syrup, apple sauce, and vanilla extract. Mix until a homogeneous paste form.
4. In a large bowl, mix the oats, flour, vegan pro, and salt. Add the date mix and combine well.
5. Shape the dough into 12 cookies, and bake for 12 to 15 minutes.
*Keep well at room temperature for 3 days, then refrigerate.
Can also be freeze.
