High-Protein Strawberry Mousse
This high-protein strawberry mousse is the perfect balance between a healthy treat and a creamy dessert. Light, smooth, and naturally sweetened, it highlights the fresh flavor of Quebec strawberries. With tofu and plant-based protein, it’s packed with nutrients while staying delicious. A simple and refreshing recipe—perfect for summer days.
Ingredients
- 2 cups fresh Quebec Strawberries
- 1 cup Silken or creamy tofu
- 1 cup Coconut milk
- 1 scoop Maple Vanilla Vegan Pro Protein
- 1 tbsp Cornstarch
- 1 tbsp Maple syrup
Optional (topping)
- 4 tbsp Vanilla yogurt
- 4 Strawberries and a few fresh mint leaves

Method:
1- In a blender, combine 1 cup of strawberries with the tofu, coconut milk, protein powder, and cornstarch. Blend until smooth and creamy.
2- Pour the mixture into a saucepan and heat over medium-high heat until small bubbles start to appear. Immediately remove from heat and let cool slightly.
3- Meanwhile, mash the remaining strawberries with the maple syrup using a fork or a masher. Divide this mixture into 4 small serving glasses.
4- Pour the tofu mixture over the strawberry base, then refrigerate for at least 2 hours to allow the mousse to set.
5- Just before serving, add a topping of your choice... or enjoy them just as they are!
