Homemade Chewy Bars
This homemade recipe perfectly recreates the classic Chewy bars from Quaker, with a delicious taste and soft texture. Quick and easy to make, it's perfect for a snack or lunchbox treat. Just mix, melt, assemble, and refrigerate before enjoying!
Homemade Chewy Bars
Remember Quaker Chewy Bars ? They were my favorite growing up. This recipe is exactly like them! The only difference is the delicious taste of Vegan Pro (just use your favorite flavor).
Super quick and easy to make. A must-have for lunch boxes!
Ingredients (16 chewy bars)
1 1/2 cups Quick-cooking rolled oats
1 1/2 cups Crisped rice cereal
1 serving Vegan Pro, flavor of your choice (I used Coffee-Wafers here)
1/4 cup Pure Coconut Sugar
11 Vegan marshmallows
1/4 cup Vegan margarine
1/3 cup Raisins
1 tsp Vanilla extract
2 tbsp Mini dark chocolate chips

1- In a bowl, mix the oats, crispy rice and Vegan Pro.
2- In a small saucepan, over low heat, melt the coconut sugar, marshmallows, margarine and vanilla. Let simmer for one minute. Gradually pour, stirring constantly, over the cereal mixture.
3- Line a 23 x 23 cm (9 x 9 in) square pan with parchment paper. Spread the mixture, add the chocolate chips and press firmly with the back of a spoon. Refrigerate for 1 hour.
4- Unmold and cut into 16 bars.
