Mango & Passion Fruit Ice Cream (No Ice Cream Maker Needed)
Looking for a refreshing tropical treat this summer? This homemade mango and passion fruit ice cream is incredibly creamy, easy to make, and requires no ice cream maker. Made with just a few simple ingredients and a touch of coconut sugar, it's the perfect dessert for warm sunny days.
Ingredients
- 2 cups Frozen mango
- 3 Fresh passion fruits (pulp and seeds)
- ⅓ cup Coconut cream
- 1½ tablespoons Raw Nutritional Coconut Sugar
- Juice of ½ lime
- A small pinch of salt
- Fresh mango and fresh passion fruit, for garnish
- 2–3 cones, optional

Instructions
1- Add all ingredients to a high-powered blender or food processor and blend until smooth and creamy.
2- Transfer the mixture to an ice cube tray and freeze overnight (or until the cubes are completely frozen).
3- When ready to serve, place the frozen cubes back into a food processor. Blend until the texture becomes ultra-smooth and creamy.
4- Serve immediately in a cone or bowl, topped with fresh diced mango and fresh passion fruit.
Notes
1- Double the recipe if you would like a larger batch. However, the ice cream should be reprocessed in a food processor before serving, as it tends to become very hard once stored in the freezer.
2- For best results, use a Vitamix-style blender equipped with a tamper to help push the frozen ice cream cubes down while blending.
