Matcha Glaze Lemon Poppy Seed Pancakes

Are you getting tired of having the same ol’ breakfast every day? Spice things up with these Matcha Glaze Lemon Poppy Seed Pancakes! These pancakes come out SUPER fluffy, flavourful, and are quick to whip up!

Ingredients (5 large pancakes)
1 cup Non-dairy milk
1 ½ cup Flour
2 tbsp Maple syrup
1 tbsp Baking powder
1 Lemon's zest
½ Medium lemon's juice
1 tsp Vanilla extract
1 tsp Poppy seeds
¼ tsp Salt
Matcha Glaze
½-⅓ cup Powdered sugar
3 tsp Lemon juice
1 tsp Pure Organic Matcha Powder
½ tsp Maple syrup


1. Add the non-dairy milk, lemon juice, and vanilla into a bowl. Mix and let sit for about 3-5 minutes.

2. In another bowl, combine the flour, baking powder, and salt.

3. Next, incorporate the wet ingredients into the dry ingredients. Mix together.

4. Finally, add in the maple syrup, poppy seeds, and zest of lemon. Mix, and your batter is ready to go!

5. To make the glaze, add the ingredients into a small bowl and mix until well combined.

6. Cook the pancakes on medium heat, coating the pan lightly in cooking spray.

7. Top with the matcha glaze, and you are ready to enjoy it!
