These vegan Grinch muffins are a fun and festive holiday treat that kids will love. They’re naturally green thanks to spinach, high in protein and fiber, and contain fruits and veggies. Top them with a simple red icing for the perfect Grinch look!

Muffins Grinch Vegan

Perfect muffins to bake during the holidays! Besides being a fun family activity, I guarantee the kids will love them. They're packed with protein, high in fiber, and even contain a serving of fruits and vegetables.

Ingredients (12 muffins)
- 1 serving of Vegan Pro – Vanilla Maple
- 1 1/2 cups All-purpose flour
- 1 cup Quick-cooking rolled oats
- 2 tsp Baking powder
- 1 tsp ground Cinnamon
- 1/2 tsp baking Soda
- A pinch of Salt
- 2 large ripe Bananas
- 2 cups baby Spinach
- 1/4 cup plant-based Milk
- 1/4 cup plain Greek vegan yogurt
- 1/3 cup Maple syrup
- 1/3 cup Canola oil
- 1 tsp Vanilla extract
- 1/3 cup Vegan mini white chocolate chips

Icing
- 2 tbsp Vegan Pro – Vanilla Maple
- 2 tbsp powdered Sugar
- 1 1/2 tbsp plant-based Milk
- Red food coloring

Method
1. Preheat oven to 425°F (220°C).
2. In a bowl, combine flour, rolled oats, baking powder, cinnamon, baking soda, and salt.
3. In a blender, combine bananas, spinach, plant-based milk, yogurt, maple syrup, oil, and vanilla until smooth. Pour into a large bowl. Gently whisk in the dry ingredients until just combined. Add the white chocolate chips and gently fold them in with a spatula. Divide the batter among 12 muffins cups.
4. Bake in the center of the oven for 7 minutes, then reduce the oven temperature to 350°F and bake for 13 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool slightly before removing from the pan, then let cool completely on a wire rack.
5. In a bowl, whisk together all the frosting ingredients. Once the muffins are completely cool, pipe a heart shape onto the top of each muffin.
