No-Bake Almond Chocolate Protein Cups

You like the classic peanut butter and chocolate combo, but you are ready for a change? This No-Bake Almond Chocolate Protein Cups| recipe will be your next favourite snack! They are easy to wipe up and a great option to bring to work or school.

No-Bake Almond Chocolate Protein Cups

A perfect post-workout or evening snack ready for you in the fridge whenever you need it? That's a yes! 

 

Ingredients (serves 24 mini cups or 12 regular cups)

Base Ingredients
1 ⅓ cup Oats
¼ cup Almond butter
¼ cup Maple syrup

Middle Layer
½ cup Almond butter
1 tsp Maple syrup
Top Layer
1 cup Vegan chocolate chips or chunks 
Pinch of sea salt (optional)
Drizzle of almond butter or cookie butter (optional) 


Method :

1. Incorporate the base ingredients together in a bowl, then press the mixture into a silicone muffin tray. Place in the freezer while you move on to the next step.

2. For the middle layer, first combine the almond butter and maple syrup. Then slowly incorporate the protein powder until well combined. 

3. Remove the muffin tray from the freezer and pack down the middle layer. Then place it back in the freezer.

4. Next, melt the vegan chocolate until smooth. Remove the tray again from the freezer and top each cup with a thin layer of chocolate. 

5. Place in the fridge and refrigerate until the chocolate has hardened. 

6. Remove cups from the tray, and (optionally) top with sea salt and almond or cookie butter. 

 

Notes :

  • Using a silicone muffin tray is recommended for easy removal
  • You can use a non-stick muffin tray but may need a knife to help remove the cups
