No-Bake Chocolate & Coffee Pie

This chocolatey pie completely made from scratch is like heaven on a plate. Sprinkle some cacao powder on top and garnish it with some fresh raspberries. Take your forks or spoons and dig in!

No-Bake Chocolate & Coffee Pie

I love the "Coffee-Wafers" protein powder. It literally tastes like "Coffee Crisp", so much that I constantly wonder why I don't use it more while creating recipes because it is irresistible in every way! This pie is no exception! A few simple ingredients for an exceptional result and black beans, will you tell me? Neither seen nor known; my children have never noticed them... How to make a terribly delicious pie? Add black beans to it! Yum!

Ingredients (One pie)
Crust
1 cup Oats
1 cup Walnuts
3 tbsp Vegan Pro - Coffee-Wafers
1 tbsp Pure Organic Cacao
3 tbsp Vegetable margarine, melted

Filling
1 cup Black beans, drained and rinsed
150g Soft tofu (silken tofu)
100g 70% dark chocolate, melted
1 scoop + 2 tbsp Vegan Pro - Coffee-Wafers
1/3 cup Strong coffee
4 tbsp Maple syrup
1 tbsp Pure Organic Cacao
1 tsp Vanilla extract
Pinch of salt

Method

1. Start by buttering a 9-inch round pie dish. Reserve.

2. For the crust: Finely chop the oats and walnuts in a food processor. Add the Vegan Pro and cacao powder. Pulse a few times.

3. Then, add the melted vegetable margarine and pulse until the dough comes together.

4. Pour into a pie pan and mash with the back of a fork. Make sure to cover the pan completely. Reserve in the refrigerator.

5. For the filling: First, melt the dark chocolate in the microwave for 1 minute. Pour into the food processor with all the rest of the ingredients.

6. Run this one until a smooth consistency and scrape sides if needed.

7. Pour the filling into the prepared crust. Refrigerate for at least 1h30 before cutting into wedges and serving.

Keep in the refrigerator at all times.
