No-bake Peach & Vanilla Tartlets

No-bake Peach & Vanilla Tartlets
It is impossible to resist this fruity and creamy delight—perfect for breakfast, a snack, or even dessert, depending on your mood! Personally, I love having them for breakfast with some yogurt and fresh fruit. It's the perfect way to start the day—I guarantee it!
Ingredients (6 tartlets)
Crust
½ cup Pitted dates
1.5 cups Quick oats
1 cup TVP (Textured vegetable protein)
¼ cup Maple syrup
¼ cup Almond butter
¼ cup Melted coconut oil
1 tbsp Water, if needed (see instructions)
Filling
1 cup Cashews, pre-soaked (1 hour in boiling water or overnight in cold water)
1 cup Peach pieces – see note
1 tbsp Melted coconut oil
1 scoop Raw Nutritional Maple Vanilla Protein
Optional: Yogurt and fresh berries

Method
1- Blend all the crust ingredients in a food processor until a sticky dough forms. It doesn't need to be perfectly smooth—aim for a textured mix. Is it not sticky enough? Add 1 tbsp of water and pulse a few more times.
2- Press the mixture firmly into 6 removable-bottom tartlet moulds, covering the bottom and sides evenly.
3- In a blender, mix all the filling ingredients until smooth and creamy.
4- Pour the filling into the tartlet moulds and refrigerate for at least an hour.
5- When ready to serve, top with yogurt and fresh berries—or enjoy as is!
Note: You can use fresh peaches, thawed frozen peaches, or canned peaches (well-drained).
