“Nutter butter” Cookies

Discovering the existence of Nutter Butter cookies was a delightful surprise for me, especially as a devoted peanut butter aficionado. These cookies have quickly become a cherished favorite, and I'm excited to share my own homemade rendition of this beloved treat!

“Nutter butter” Cookies

I didn't know the existence of Nutter Butter cookies before I was asked to create a similar recipe. I don't understand why I didn't know about this, considering how much I love peanut butter!

These cookies are a real hit, and peanut butter lovers will be delighted.

 

Ingredients (8 cookies)

4 tbsp Water
1 1/3 cup All-purpose flour
1 tsp Baking soda
1/8 tsp Salt
3/4 cup Natural peanut butter
1/2 cup Packed brown sugar
1/3 cup Vegetable margarine
2 tbsp Plant-based milk
1 tsp Vanilla extract

Icing
1/4 cup Natural peanut butter
2/3 cup Icing sugar
3 tbsp Plant-based milk



Method : 

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. In a small container, mix the flax and water. Leave to swell for 5 minutes.

3. In a bowl, mix the flour, bicarbonate and salt. Set aside.

4. In a large bowl, using a whisk, mix the flax, peanut butter, brown sugar, margarine, plant-based milk and vanilla. Add the dry ingredients gradually and, using a spatula, mix. You should obtain a malleable and homogeneous dough.

5. Using your hands, shape 16 biscuits (bake in 2 stages so that everything fits on the baking sheet) into a peanut shape. With a knife, draw lines (see photos) to give the effect of a peanut. Cook for 12 minutes and let cool on a baking tray.

6. In a bowl, using a whisk, mix all the ingredients for the icing. Leave to rest for 1 hour in the refrigerator. Spread on the back of a biscuit and close with the back of another biscuit. Repeat with the remaining 14 cookies for a total of 8 cookies.
