Oatmeal Banana Breakfast Cookies

Oatmeal Banana Breakfast Cookies

These cookies are nutritious and so good. Whether you enjoy them for breakfast or as a snack, they are really perfect. I am often on the run and like to eat this type of cookie for breakfast. I usually accompany them with a large glass of chocolate soy beverage, which gives me a greater protein intake.

In addition, the recipe fits very well into a Sunday meal prep.



Ingredients (6 cookies)
1/4 cup Dark mini chocolate chips
1/4 cup Dried grapes

Liquid
2 tbsp Liquid coconut oil
2 tbsp Maple syrup
1 Mashed banana
1/4 cup Natural peanut butter
1 tsp Vanilla extract

Dry
1 1/4 cups Rolled oats
1/4 cup All-purpose flour
1/4 cup Almond flour
1 1/2 tbsp Organic Chia Seeds
Pinch of salt


Method : 

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. In a small bowl, mix dry ingredients together.

3. In a large bowl, mix all wet ingredients. Add dry ingredients to the wet mixture and mix well. Add chocolate chips and raisins.

4. Shape into 6 cookies and bake for 15 minutes. Let cool and enjoy.
