Peanut & Chocolate Stuffed Dates
Name two ingredients that go together perfectly... If you didn't choose "peanut butter" and "chocolate," then you got it all wrong — these in Medjool dates = the perfect combination.
Peanut & Chocolate Stuffed Dates
If I had to eat ONE food for the rest of my life, it would be peanut butter. I could easily finish a full jar with a spoon in one day!
These peanut butter stuffed dates are crazy. They remind me of small appetizer bites, but in a dessert version! Medjool dates are a very big, soft and perfectly sweet kind of date. They taste like honey.

Ingredients (12 bites)
12 Medjool dates
¼ cup Natural peanut butter
1 tbsp Vegan Pro - Maple Vanilla
1 tbsp Pure Organic Coconut Sugar
2 tbsp Plant-based milk
1 tsp Vanilla extract
Pinch of salt
¼ cup Dark chocolate chips
- Split the dates down the middle.
- In a bowl, mix the peanut butter, Vegan Pro, coconut sugar, plant-based milk, vanilla extract and salt until combined. Put the filling in the center of the dates.
- Melt the chocolate chips in a double boiler.
- Meanwhile, cover a plate with parchment paper.
- Once the chocolate has melted, dip the dates' bottoms, one at a time and place them on the plate. Refrigerate 30 minutes before serving!
