Plant-based Double Chocolate Cookies

This cookie recipe is quite supportive of the small cravings that may occur during the day. Honestly, everyone loves chocolate chip cookies!

I froze the cookies and left them in a freezer bag to have on hand while on maternity leave. A great snack to have on hand when you're feeling tired.

Ingredients (10 cookies)

1 cup Quick cooking rolled oats
1/2 cup Unbleached all-purpose flour
1/2 tsp Baking soda
Pinch of salt
1/4 cup Vegetable margarine
1/4 cup Natural peanut butter
1/2 cup Unsweetened plant-based milk
1/4 cup Maple syrup
1 tsp Vanilla extract
1/4 cup Dark chocolate chips

Method :

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. Combine the oats, flour, cocoa, Vegan Pro, baking soda and salt in a bowl.

3. Combine the margarine, peanut butter, plant-based milk, maple syrup, and vanilla in another large bowl. Add the dry ingredients and mix with a spatula. Add the chocolate chips and mix.

4. Form 10 cookies on the baking sheet and bake in the oven for 10 to 12 minutes. Leave to rest for a few minutes on the baking sheet or a cooling rack.
