We have the perfect solution for when you need a sugary treat for one! This Poor's man pudding in a mug is quick to whip up, no need to wash dishes, is full of maple flavour, and so comforting. Grab your favourite mug and treat yourself!

Poor Man's Pudding In a Mug

The Poor man's pudding is by far my favourite dessert. I am a big lover of maple syrup, and this is a perfect recipe for the sugar season. You don't always want to cook a big dessert and end up with several servings on hand. This is why I love the" in a mug" recipes so much! It only takes 5 minutes to make and almost no dishes to wash!

 

Ingredients (1 serving)
Cake
3 tbsp Unbleached all-purpose flour
1/2 tsp Baking powder
1 tbsp Canola oil
1 tbsp Maple syrup
2 tbsp Plant-based milk
1/2 tsp Vanilla extract
Pinch of salt
Syrup
1 tbsp Maple syrup
2 tbsp Plant-based milk


Method

1. In a mug, using a fork or a small whisk, combine flour, Vegan Pro, baking powder, canola oil, maple syrup, plant-based milk, vanilla extract and salt.

2. For the syrup, in a small bowl, mix the maple syrup and the plant-based milk. Pour over cake and microwave for about 100 seconds.
