Protein Chocolate Truffles
I wanted to create a truffle recipe for the holiday season, but I always found this kind of recipe too complicated. It usually requires melting the chocolate (and if it's overcooked, it's easily missed), then the rest time is quite long in the refrigerator.
So I created this recipe that doesn't require melting chocolate, which is very quick to make and absolutely delicious. It is just as chocolatey as the original recipe; plus, it has more protein thanks to the addition of the chocolate Vegan Pro.
Ingredients (12 truffles)
1 cup Medjool dates, pitted
1/4 cup Almond butter
1 tbsp Vanilla extract
1 scoop Vegan Pro - Chocolate
1/2 cup Pure Organic Cacao
Pinch of salt
1/4 cup Water
1/2 cup Decorative chocolate candies
Method
1. Mix the dates, almond butter, vanilla, Vegan Pro, cacao, and salt in a food processor.
2. Gradually add water until a sticky paste is obtained.
3. Form 12 balls and coat them with decorative candies.
