Protein Pudding with Peanut Butter, Biscoff & Caramelized Bananas

Craving something sweet, creamy, and high in protein?
This peanut butter, banana, and Biscoff protein pudding hits all the right notes — indulgent yet nourishing.
It’s perfect as a dessert or snack when you want something satisfying without the guilt.
And the brûléed bananas on top? Absolutely next level.

Ingredients:

- 2 blocks (600g) silken Tofu, well drained
- 3 tbsp natural Peanut butter
- 1 scoop (about ⅓ cup) Raw Nutritional Maple Vanilla Protein Powder
- 3 tbsp Maple syrup
- 1 tsp Vanilla extract
- ½ cup neutral Plant-based milk
- A pinch Salt

Toppings:

- 6–7 Biscoff cookies
- 1 Banana
- 2–3 tbsp White sugar

Method:

1- Add all the pudding ingredients to a high-speed blender or food processor. Blend until smooth and creamy, scraping down the sides as needed.

2- Pour the pudding into a serving dish and refrigerate for 1 to 1.5 hours until it thickens.

3- Top with crumbled Biscoff cookies and banana slices.
 • To make caramelized bananas, sprinkle the banana slices with white sugar and use a kitchen torch to melt and caramelize the sugar until golden and crisp, like a crème brûlée topping.
 • Alternatively, you can sauté the banana slices in a bit of maple syrup or serve them fresh — either way, they’re delicious!
