Pumpkin and Spice Oatmeal

Pumpkin and Spice Oatmeal

Cold weather is setting in, and we need to warm up a bit! Our dear Sara has concocted a recipe for oatmeal with autumn spices that will blow you away. It is an excellent breakfast at home or a small snack for your cravings.

Ingredients (2 servings)

1 cup Plant-based milk
1/2 cup Water
1/4 cup Pumpkin puree
2 tbsp Pure Organic Coconut Sugar
2 tbsp Maple syrup
2 tbsp Organic Ground Flaxseeds
1/4 tsp Ground cinnamon
1/4 tsp Allspice
Pinch of ground nutmeg
Pinch of ground ginger
Pinch of salt
3/4 cup Large oats

Toppings
Plain plant-based yogurt
Nut butter
Chopped pecans

Method

1. Place all the ingredients except the oatmeal in a saucepan. Bring to a boil over medium-high heat.

2. Reduce the heat to medium-low, add the oatmeal and cook, constantly stirring with a wooden spoon.

3. Allow about 5 to 8 minutes of cooking time. When the mixture has thickened and the oatmeal is tender, divide the oatmeal into two bowls.

4. Top with a plant-based yogurt, nut butter and chopped pecans. Serve immediately.
