Queen Elizabeth Cookies
Everyone is familiar with the famous Queen Elizabeth cake, which is mainly made of coconut and dates. As this dessert is very popular in Canada, I decided to create a cookie version that is much easier to carry!
The little extra coconut frosting (very simple to make) keeps the cookies moist. They are really delicious and perfect for enjoying with a good coffee or tea!
Ingredients (12 cookies)
5 Large Medjool dates, pitted and chopped
1/4 cup Water
1 1/2 cup Unbleached all-purpose flour
1/2 cup Pure Organic Coconut Sugar
1/2 tsp Baking soda
Big pinch of salt
1/2 cup Vegetable margarine, melted
2 tbsp Plant-based vanilla milk
1 tsp Vanilla extract
1/4 cup Unsweetened grated coconut
Garnish
1 tbsp Coconut milk (canned)
1 tbsp Vegetable margarine
3 tbsp Unsweetened grated coconut
Method
1. Preheat the oven to 350 °F and lightly oil a baking sheet.
2. In a small saucepan, bring the dates and water to a boil. Remove from the heat and let stand for 5 minutes.
3. In a large bowl, combine the flour, sugar, baking soda and salt. Reserve.
4. With a blender, puree the dates. Pour the puree into a bowl, add the margarine, the plant-based milk and the vanilla extract. Using a whisk, combine.
5. Gradually add the dry ingredients and, with a spatula, mix. Add the coconut and mix again.
6. Form 12 cookies and put them on the baking sheet. Bake for 15 minutes in the oven.
7. Meanwhile, put the garnish ingredients in a bowl. Heat 30 seconds in the microwave. Mix and set aside.
8. Take the cookies out of the oven, let them cool and cover with filling.
