S'mores Cookies

I can confidently say that these cookies are the BEST in the world. I am very proud of this recipe. The combination of graham crackers, chocolate, and marshmallows is the perfect trio. With every bite, you feel like you are on the fire's edge.

The organic ground flaxseeds are super important to this recipe. They give the cookies the perfect texture.



Ingredients (11 cookies)

1 tbsp Organic Ground Flaxseeds
2 tbsp Water
1 1/3 cups All-purpose flour
1 tsp Baking soda
1/4 tsp Baking powder
1/8 tsp Salt
1/2 cup Vegan margarine
1/3 cup Brown sugar, packed
1/3 cup White sugar
2 tsp Vanilla extract
1 tbsp Water
1/3 cup Dark chocolate chips
1/3 cup Vegan graham crackers, chopped
1/3 cup Vegan mini marshmallows



Method : 

1. In a small bowl, mix flax seeds and water. Set aside.

2. Preheat oven to 350°F and line a baking sheet with parchment paper.

3. Mix flour, baking soda, baking powder, and salt in a bowl.

4. In a large bowl, mix flax mixture, margarine, brown sugar, sugar, vanilla extract and water using a whisk. Add dry ingredients and mix. Add chocolate chips, cookies and marshmallows. Using a spatula, gently mix.

5. Form 11 balls and place them on a baking sheet. The 11 balls will not fit on a baking sheet; I recommend starting with 6 balls. Bake for 14 minutes and let cool before serving.
