Soft & Chewy Oatmeal Cookies
The title describes it well.
Healthy, yet soft, chewy and of course, irresistibly delicious oatmeal cookies that won't last long in your kitchen. They don't taste "healthy", we promise. It is like biting into little circles of heaven!
Whether you, your husband, your kids or your guests fall into those, they sure will be pleased by the combo of flavors, texture and even smell.
This recipe is simple, made with ingredients that you probably have under hands and can be custom. The customization of this recipe might be the best part; Chocolate chip, sliced almond, dried blueberry, dried cranberry, dates, macadamia nuts, everything can be added to change things up and vary every time. Exactly the opposite of the boring, tasteless, or dry reputations oatmeal cookies sometimes attract.
You can even mix ingredients to suit different styles of diet such as:
--> Refined sugar-free
--> Vegan
--> Gluten Free
--> Dairy-Free
The exact following recipe isn't, but you can totally tweak it and the cookies would be as good.
Ingredients for 8 cookies:
- 3/4 cup Flour (can do gluten-free flour, whole wheat, white)
- 1 1/2 cup oats
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. Salt
- 1/2 cup of unsweetened applesauce
- 3 tbsp. melted butter (can do vegan butter)
- 1 egg (can do flax egg as a vegan option)
- 1tsp Vanilla extract
- 1/2 cup coconut palm sugar
- 1/2 cup brown sugar (can sub for another 1/2 cup of coconut palm sugar)
- 1/2 cup Raw Nutritional Maple-Vanille Vegan Pro
Optional: Nuts, chocolate chips, dried fruits, etc...
Instruction:
- With the rack in the middle position, preheat the oven to 190 °C (375 °F). Line a baking sheet with parchment paper.
- In a bowl, combine the flour, the oats, the baking powder, the baking soda, and salt. Reserve
- In another bowl, mix the applesauce and the melted butter. Once the mixture isn't hot anymore, add the egg (make sure it's room temperature so the egg doesn't cook) and the vanilla extract. Beat until homogeneous.
- To the wet ingredients, add the coconut palm sugar, the brown sugar, and the Vegan Pro. Mix until homogeneous.
- Slowly pour half of the wet ingredients into the dry ingredients, mix, then add the other half.
- Finish by adding your add-on.
- On the baking sheet, form cookies about 45ml (3tbsp) big then press the balls so that they are about 2-cm (¾-inch) thick.
-Bake for approximately 10-12 minutes. If you want it super super soft, go on the lower side.
Now, convince yourself to not finish the plates in one day!

I just made their Oatmeal cookies recipe with the protein Maple-Vanilla and it’s so so good… The cookies are soft and chewy, exactly like the photo. It was a success in my family.
