Soft No-Bake Breakfast Cookies

Would you love to enjoy a cookie for breakfast? Well, with this recipe, you can! These Soft No-Bake Breakfast Cookies only require four ingredients, can be whipped up in a matter of minutes, and are protein-packed, which allows you to enjoy the deliciousness of a cookie for breakfast with no guilt!

Ingredients (12 cookies)

3 scoops Vegan Pro - Cookies N' Cream
1 ½ cup Oats
¾ cup Tahini
1/2 cup + 2 tbsp Agave nectar
Optional: Whole brown flax seeds, to top

Method

1. Measure half of the oats (¾ cup) and place in a high-speed blender or food processor. Blend the oats until it becomes fine.

2. Place the ¾ cup blended oats, the remaining ¾ cup of oats, protein powder, tahini, and agave into a medium-sized bowl.

3. Mix and knead with your hands until it forms a dough.

4. Take about 1-2 tbsp of the dough and roll in your hands, then pat into your preferred cookie shape.

5. Optional: Top your cookie with the whole brown flax seeds

Notes:

  • Best to store between pieces of parchment paper, but not necessary
  • Store at room temperature or in the fridge
