Strawberry Shortcake Mug Cake

The strawberry season is so short that I needed to create a recipe that is done quickly. Strawberries are eaten like endless candies, and I am totally a fan of them! Morning, noon and night, I spoil myself because that period passes quickly! A mug cake ready in 5 minutes is the solution for the evening sweet without having to bake a big cake. And believe me, it's awfully decadent!

Preparation time: 5 minutes

Ingredients (One serving)

Wet
1 tbsp Vegetable oil
1 tbsp Unsweetened applesauce
2 1/2 tbsp Granulated sugar
3 tbsp Plant-based milk

Dry
1 tbsp Vegan Pro - Maple Vanilla
1/4 tsp Baking soda
3 tbsp All-purpose flour
Pinch of salt
3 Fresh strawberries, chopped

Garnish
Plant-based vanilla yogurt

Method

1. Mix all the wet ingredients together in a cup or ramekin.

2. Add the dry ingredients one after the other, mixing between each addition.

3. Finally, add the chopped fresh strawberries and press them lightly into the dough with your fingers.

4. Microwave 1 minute or until the center is cooked through when pricked with a toothpick.

5. Let cool for a few minutes before garnishing with vanilla yogurt. Enjoy!
