Ingredients (8 scones)

1 cup Fresh blueberries
Dry
2 cups Unbleached all-purpose flour
1/2 cup Vegan Pro - Maple Vanilla
1 tbsp Baking powder
1 tbsp Organic Ground Flaxseeds
Pinch of salt (we love to use pink Himalayan salt)
Wet
1/2 cup Cold vegan butter
3/4 cup Plant-based milk of choice (we used almond milk)
1 tsp Vanilla extract

Method

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper. Set aside.

2. In a large bowl, mix all the dry ingredients. Then add the cold vegan butter and mix, crushing it with a fork until you get a texture that resembles breadcrumbs.

3. Add remaining wet ingredients and mix. Add the blueberries and mix again gently to distribute them well without crushing them too much.

4. On a lightly floured surface, knead the dough a few times, always very gently to avoid crushing the blueberries, and form a ball. Flatten with your hands (lightly flour your hands if they are sticky) into a circle of about 1 inch thick.

5. Using a large knife, cut the dough into 8 wedges. Place the scones on the baking sheet lined with parchment paper and bake for 22 to 26 minutes or until lightly browned on top. Serve hot, warm or cold.
